Effect of Water on Hardness of Wheat
The soft and hard texture of wheat grain is an important index to evaluate wheat processing quality and edible quality. Hardness is one of the important basis for classification and pricing of wheat market at home and abroad. The hardness index measured by a wheat hardness tester characterizes wheat's resistance to mechanical comminution. The level of the obtained wheat hardness index is affected by various factors such as temperature, moisture, and the instrument itself. This article mainly analyzes the effect of moisture on the hardness of wheat, in which the hardness of wheat is determined by the feed hardness meter.
Through the corresponding experiments, we obtained the effect of moisture on wheat: 1 From the curve of the change of moisture and hardness index, it can be seen that for the same wheat sample, the hardness decreases as the moisture content increases. 2 When the moisture content is between 12.8% and 17.4%, the hardness index changes slowly. With the increase of water content, the hardness index value does not decrease significantly; and when the moisture content is between 17.4% and 20.2%, the moisture content increases. The hardness index decreased significantly. 3 In GB/T 21304-2007, the moisture content of the tested sample is required to be between 9% and 15%. Otherwise, the moisture content of the sample must be adjusted to this range before measurement. In actual operation, when the moisture reaches 16.1% or more, it is found that the measurement has a double-test over-correction condition and needs to be measured again. When the moisture is high, the stability of the instrument is affected. According to relevant data, the moisture content of wheat in China is mostly between 10.5%~13.5%. The high moisture content mainly comes from Anhui, Jiangsu, Henan, Sichuan, and Chongqing, mainly due to the local wet climate conditions. Therefore, using a hardness index meter to measure the hardness can meet the actual needs, does not affect the classification of wheat soft and hard. 5 This experiment only measured the hardness index after artificially adjusting the water content of hard wheat, and did not experiment with soft wheat. In theory, the effect of moisture on soft wheat is greater than that of hard wheat, that is, soft wheat is more sensitive to water changes than hard wheat. In the future, the trend of hardness index of different hardness wheat samples with moisture content will be further explored. According to the difference in the hardness of wheat varieties, the effect of the fluctuation of moisture content on the hardness of wheat will be specifically corrected, and the water hardness index will be further studied.
